An egg salad sandwich is right up there with peanut butter and jelly on the list of classic American sandwiches. I found one on a regular basis in my lunch box when I was a child and have made them for my family forever. I make egg salad the way my grandmother did, not a lot of fuss and extra flavors added so the taste of eggs and good mayo can shine through.
Part of the bounty from last weekend's farmers market was a dozen eggs from Mark at Champoeg Farm and a loaf of Grains & Nuts bread from Dave's Killer Breads booth, so egg sandwiches were on Sunday's menu. I want the flavor of farm fresh eggs to come through so I add only salt, pepper, a bit of finely minced onion and a few drops of sweet pickle juice to the mayo and chopped, boiled eggs. I did fancy it up a little bit by adding several strips of bacon left over from breakfast. This is a simple sandwich and so delicious when the components are top quality. Potato chips are the perfect accompaniment because the salty crunch of the chips compliments the creamy texture of the egg salad.
A few suggested additions to the basic salad are chopped olives, minced sun dried tomato, green onion, chives, sweet or dill pickle, celery, curry powder, and dill.

I teased Mark that the egg on the left is a pigeon egg, but he assured me that both are chicken eggs. The smaller one is from a young bird. The right egg had two huge, deep yellow yolks. I haven't seen that in years. All the TLC Mark gives his flock pays off.
A favorite sandwich at my house too, Cathy. But, I had to chuckle. Who has bacon left over from breakfast?
ReplyDeleteWell, you surely hit the jackpot with a double yolk! Your sandwich looks delicious and I can't believe I've never made it with bacon. Nothing like a few ruffles with a sandwich! Yummy post!
ReplyDeleteWow! Eggs with double yolk thats super! Your sandwich looks delicious! Look at those eggs! the bacon! Drooling here!
ReplyDeleteI LOVE egg salad sandwiches- almost as much as warm off the vine tomato and mayo sandwiches ! :)

Now that is a sandwich! It look wonderful, Cathy. You've made me hungry for ...egg salad of course.
ReplyDeleteHave a great day. Blessings...Mary
Well, I've got hard boiled eggs in the fridge, fresh crusty bread & the lettuce. Only thing missing from my lunch will be the bacon. Thanks for the idea to add those extras. I never would have even considered sun dried tomatoes but I've got those on hand too. Maybe I'll stick in some roasted red pepper & mushrooms that I just picked up from the deli counter.
ReplyDeleteExcuse me while I go eat right this minute!!!!
Thanks Cath!!
I can't remember my last egg salad sandwich and don't know if I ever had one with bacon - but I plan to have one just like yours the next time we boils eggs (She likes to have them in the frig for a quick lunch) - it looks outstanding.
ReplyDeleteI can't really say for sure what captured my attention more...the freshest of farm eggs...your fabulous tasty dependable sandwich or your very interesting manicure ;o)
ReplyDeleteI love your unique zest for life.
Flavourful wishes, Claudia
I have NEVER had a fresh egg in my life:-(

I've never had an egg salad sandwich, but yours looks beautiful! Especially with that bacon on there :)
ReplyDeleteI bought some eggs from the farmers market last week and came up with 2 double-yokers. One egg would not fit in the carton it was so large.
ReplyDeleteBeautiful classic specialty with fresh eggs from the farm, I bet it taste over the top.
ReplyDeleteI agree with Susan. Who has leftover bacon? My recipe for egg salad is almost identical to yours. Guess we are purists. That tad of sweet pickle relish is an absolute must. Our farmers' market opened Saturday so there are fresh eggs in my kitchen--all shapes and sizes and just the way we like them.
ReplyDeleteBest,
Bonnie
Mouth-watering! Especially with the bacon.
ReplyDeleteGreat posting.

Oohhh... this looks delicious!!! I love egg salad sandwiches but this has definitely kicked it up a notch! =o)
ReplyDeleteThis is a classic favorite of my husband. I make his on beautiful whole grain bread too and roll mine in a romaine leaf. It is a delicious lunch year round. Your market days sound like a lot of fun with weekly friends, and great finds.
ReplyDeleteYum, I love egg salad sandwiches...but why in the world have I never thought of adding bacon!? It seems so obvious in hindsight. Huh. Betcha I won't forget next time ;)
ReplyDeleteNow I am starving. My favorite sandwich is egg salad with a little chili paste. I think I will make it tomorrow. The bacon sounds good in it too.
ReplyDeleteI love a good sandwich with nice fresh bread..yum! You make some of the most delicious sandwiches I have ever seen. It must be a treat to be at your home around lunchtime:)
ReplyDeleteI had that happen once, cracked an egg into a skillet and out came two yolks...I squeeled "TWINS' That was before I was blogging and had no camera attached to my arm in the kitchen....darnit.
ReplyDeleteLove Egg Salad Sandwiches, beautiful post and photo.
Egg salad is one of my favorites. I never even thought to add bacon; what a good idea.
ReplyDeleteThat is one delicious looking sandwich. Thanks for posting! I'm a long time reader of your fabulous blog, but first time follower as I've only just opened a blogger account and set up a blog (http://bakezilla1.blogspot.com/). I just hope mine is as great as yours! :)
ReplyDeleteNow, who's that person holding the eggs? hehe... I love egg sandwich too and we have full daily farm eggs supply here. So, no worries! Have a wonderful summer time!
ReplyDeleteCheers, Kristy
This looks amazing! The egg filling looks so creamy!
ReplyDeleteEgg salad sandwiches were a standard fare when my kids were growing up, but they never looked as good as yours. The bacon factor raises it to another level.
ReplyDeleteIt was my father's favorite sandwich! I have no idea why I don't make it more often for my family. And with bacon, it takes it to a whole new level! Might have to make this for lunch today! :)
ReplyDeleteI haven't had an egg salad sandwich in a long time. Perhaps too long, because I'm giving this a try.
ReplyDeleteSam
I love egg salad sandwiches! They probably rank in my top five all-time favorite sandwiches. I like to add a little celery seed to my egg salad. The bread looks amazing too. You are so lucky to have so many wonderful vendors near you.
ReplyDeleteLook at the size of that egg!
I am now craving an egg salad sandwich. I make them just like you but I have never tried adding bacon. I bet it was amazing on Dave's bread! YUM.
ReplyDeleteLook at those eggs..amazing difference..
ReplyDeleteBacon makes most things better!
I forgot to tell you I wore your Wives with Knives apron at out community Mem Day Picn
Got a few interesting remarks, LOL...
Or did I tell you? I no sooner cleaned up from that group of house guests and the next arrived! I am exhausted!
Hi Cathy,
ReplyDeleteYou sure know how to bring an ordinary egg sandwich up a notch! Your photos give me the urge to make this and it will be on my menu real soon.
Rita
I love egg salad too! It is a favorite of mine for lunch or tea. That egg is huge!
ReplyDeleteI now have an overwhelming desire for this sandwich. Such a craving. Great photo.. Making some tomorrow..
ReplyDeleteOoooo, made with homemade mayo...I won't even share with my kids! :) Guess what I'm making tomorrow for lunch? Thank you for that glorious picture :)
ReplyDeleteEgg salad is the Queen of Sandwiches, in my opinion. I make an embarrassingly obvious run to the table when I see egg salad at any function. I've never added pickle juice to mine, but I will give it a try next time.
ReplyDeleteI just bought fresh eggs at the farmer's market yesterday. We have been trying to work out the perfect soft boiled egg. Fresh eggs are such a delight in details: color, shape, shell thickness and flavor density. It's the simple things that make farmer's markets so special!
ReplyDeleteIt does my heart good to see such happy birds. I don't buy any kind of eggs that aren't cage free, these days. I get farm fresh eggs often, and just love them. I can taste the difference. As for the sandwich, we love egg salad sandwiches. I make mine like yours, only why did I never think to add bacon? D'oh! You are so smart!
ReplyDeleteI am not a big egg fan, but when I see your sandwich, with the bacon, I thought "OH! I would try that!" lol.
ReplyDeleteGrowing up our family raised chickens and I remember seeing many a double yolked egg!
Oh, Cathy, you have stirred up memories of my dad's perfect egg salad served on sandwiches. Wow! Delicious! Yours is absolutely perfect!
