The Classic All American Egg Salad Sandwich




An egg salad sandwich is right up there with peanut butter and jelly on the list of classic American sandwiches.  I found one on a regular basis in my lunch box when I was a child and have made them for my family forever. I make egg salad the way my grandmother did, not a lot of fuss and extra flavors added so the taste of eggs and good mayo can shine through.

Part of the bounty from last weekend's farmers market was a dozen eggs from Mark at Champoeg Farm and a loaf of Grains & Nuts bread from Dave's Killer Breads booth, so egg sandwiches were on Sunday's menu. I want the flavor of farm fresh eggs to come through so I add only salt, pepper, a bit of finely minced onion and a few drops of sweet pickle juice to the mayo and chopped, boiled eggs.  I did fancy it up a little bit by adding several strips of bacon left over from breakfast.  This is a simple sandwich and so delicious when the components are top quality.  Potato chips are the perfect accompaniment because the salty crunch of the chips compliments the creamy texture of the egg salad.

A few suggested additions to the basic salad are chopped olives, minced sun dried tomato, green onion, chives, sweet or dill pickle, celery, curry powder, and dill.

I teased Mark that the egg on the left is a pigeon egg, but he assured me that both are chicken eggs.  The smaller one is from a young bird.  The right egg had two huge, deep yellow yolks.   I haven't seen that in years.  All the TLC Mark gives his  flock pays off.

  6. Well, I've got hard boiled eggs in the fridge, fresh crusty bread & the lettuce. Only thing missing from my lunch will be the bacon. Thanks for the idea to add those extras. I never would have even considered sun dried tomatoes but I've got those on hand too. Maybe I'll stick in some roasted red pepper & mushrooms that I just picked up from the deli counter.

  7. I can't remember my last egg salad sandwich and don't know if I ever had one with bacon - but I plan to have one just like yours the next time we boils eggs (She likes to have them in the frig for a quick lunch) - it looks outstanding.

  13. I bought some eggs from the farmers market last week and came up with 2 double-yokers. One egg would not fit in the carton it was so large.

  15. I agree with Susan. Who has leftover bacon? My recipe for egg salad is almost identical to yours. Guess we are purists. That tad of sweet pickle relish is an absolute must. Our farmers' market opened Saturday so there are fresh eggs in my kitchen--all shapes and sizes and just the way we like them.

  21. This is a classic favorite of my husband. I make his on beautiful whole grain bread too and roll mine in a romaine leaf. It is a delicious lunch year round. Your market days sound like a lot of fun with weekly friends, and great finds.

  25. I had that happen once, cracked an egg into a skillet and out came two yolks...I squeeled "TWINS' That was before I was blogging and had no camera attached to my arm in the kitchen....darnit.

  40. Egg salad is the Queen of Sandwiches, in my opinion. I make an embarrassingly obvious run to the table when I see egg salad at any function. I've never added pickle juice to mine, but I will give it a try next time.

  41. I just bought fresh eggs at the farmer's market yesterday. We have been trying to work out the perfect soft boiled egg. Fresh eggs are such a delight in details: color, shape, shell thickness and flavor density. It's the simple things that make farmer's markets so special!

  42. It does my heart good to see such happy birds. I don't buy any kind of eggs that aren't cage free, these days. I get farm fresh eggs often, and just love them. I can taste the difference. As for the sandwich, we love egg salad sandwiches. I make mine like yours, only why did I never think to add bacon? D'oh! You are so smart!
