Farmers Market Fruit Cobbler


One of my favorite market customers gave me this recipe for fruit cobbler several years ago and I make it often during the summer when fruit is plentiful and delicious. Peaches, berries and plums are ideal because they are juicy and add moisture to the cake. As the cake bakes the juices caramelize around the edges of the baking dish and where the fruit bubbles up into the batter that rises to the top during baking. Peach cobbler is my favorite, especially with a big scoop of vanilla ice cream on top.




You can find many variations of this type of cobbler and this one is my favorite because my friend shared it with me. This goes together so quickly and, if you put it into the oven when guests arrive for dinner, it will be warm and ready to serve for dessert.

Farmers Market Fruit Cobbler


1/4 cup butter
1/2 cup sugar
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
4 cups fruit


Prepare fruit: Peel, pit and slices fruit. Add sugar to taste, about 1/2 to 3/4 cup. Peaches, berries or plums are especially good. Don't use apples. They aren't juicy enough.
Blend together flour, baking powder, salt and sugar. Cut in soft butter. Stir in milk. You can mix this right in the baking pan if you wish. Pour the sweetened fruit over the top of the dough. DON'T MIX IT. Sprinkle with a little cinnamon and dot with butter. Bake at 350 degrees for about 40 minutes or until tester comes out clean. Serve warm with whipped cream or ice cream.

  3. Mmmm ... I really, REALLY, like cobbler. I think the only kinds I've had, though, are apple or peach. When I read that you suggested plums, we'll that's what I immediately started craving big time! I haven't had a single plum yet this summer. I love them, and this would be a great way to enjoy them. YUM!

  11. That looks really good and easy. I have a recipe I've been using from Rebecca Rather's cookbook The Pastry Queen, but it uses a stick of butter! This might be more healthy and still give the same crust that I like!
