Cauliflower Salad
Cauliflower salad was the recipe in my first blog post almost a year ago. I was so thrilled that I figured out how to assemble a photo and a recipe that it didn't matter that the only comment I received was from my sweet daughter who was helping me figure out the whole comment thing. I know this is similar to a popular broccoli salad, but I think it's so much better with cauliflower and is perfect for hot summer days when we need something light yet hearty. The flavors blend beautifully and the crunch factor is perfect.

Looking back at this recipe helps me remember that my photos have gotten a little better over time (a frustration point for me). In this old post I don't have a photo of the finished salad because, out of the dozens I took, not a single one turned out. If you've never tried this salad I hope you will because it's delicious, and if you've only made it with broccoli, do try the cauli. I know you'll love it.
I always want to add more cauliflower into my diet. Love the idea. If I leave the peas out, hubby might eat it too.

I have been wanting to find a cauliflower salad recipe...I love this veggie and would like more ideas for it, so thanks for posting this delicious looking salad!

This will be the next big salad I make -- I love vegetable salads but some make more than others and cauliflower is a BIG vegetable!

ReplyDeleteI just wanted to let you know I made the Lemon Pudding cups this Sunday for dessert and everyone loved them. If you get a chance, go on The Pioneer Woman's website and try her recipe for "baked fudge". It's very similar, cooked in a water bath, and not as heavy as the title sounds. Just delicious too!
