Bacon and Egg on Toast ~ The Best of the Farmers Market





August is the peak of the season at my farmers market.
  Corn and peaches are coming in and booths are bursting
 at the seams with produce of all kinds.
I have a basic shopping list each week from which I can assemble most of the recipes
 that are my weekly favorites:
greens, usually frizee, arugula and leafy greens,
bread, eggs, cheese, bacon,
fruits and vegetables.

Lunch today is bacon and egg on toast,
so simple to put together.
Start with a thick, buttered slice of toasted bread,
Add a handful of fresh, crisp frizee and arugula
and bits of smoky bacon.
Top with a poached egg,
parmesan shavings, and 
a drizzle of your favorite vinaigrette.
Doesn't this look delicious?




My Favorite Vinaigrette

1/4 cup red wine vinegar
1 teaspoon mustard
(I use a coarse grain fruity mustard)
1 teaspoon honey
chopped fresh herbs
sea salt and freshly ground pepper
2/3 cup olive oil

Whisk together vinegar, mustard, honey, salt and pepper.
Slowly whisk in olive oil until dressing has a creamy consistency.
Add chopped herbs.

I use this dressing on my dinner salads, on vegetables, drizzled on sandwiches,
 spooned over ripe tomato slices
 or freshly cooked green beans.

  2. I love eggs! I'll try this soon. We poach our eggs all the time... and prefer that to scrambled or fried.

  7. On Monday morning (it was a holiday up here) we had a big fry-up. It's not something we do often, but bacon and eggs and toast can't be beat! I've never tried anything quite like what you've shown, and since I have leftover bacon, this may be tonight's supper. I like the sound of your vinaigrette and will give it a try too.

  18. Cathy, that is the most beautiful 'bacon and egg on toast' I have ever seen. Red wine vinegar and extra virgin olive oil dressings are the best.

  19. Hi Cathy....dish looks great...but how in the world do you poach a perfect egg?...I have been cooking for 50 years and still have trouble poaching an egg....tried everything. what's the secret?

  33. Simple and delicious--a favorite of ours. And, for the first time, our local farmers' market has frizee. Usually I can only find it, for a hefty price, at Whole Foods.

  38. I've been blogging for one year plus and it's great to know how you guys cook according to seasonal vegetables at the other side of the globe. We have all kinds of vegetables supply here throughout the year except fresh fennel & rhubarb. Btw, your toast looks so tempting! Hope you're enjoying your day.
