Open Face Baked Bean, Tomato and Cheddar Cheese Sandwich

My grandmother was a great cook - not a fancy one, but great nonetheless.  My grandparents lived in a small house on the farm where I grew up and I spent many hours beside her in her kitchen as she prepared  what was raised on the farm.  In true German fashion, nothing went to waste and my grandma made scrumptious meals out of sometimes very little.  One of my favorites was baked bean sandwiches.  She made trays of these when their friends got together to play cards on Friday nights and the wonderful aroma of baked beans and bacon is still vivid in my memory.

I've made homemade baked beans just so I could make these sandwiches, but good canned beans would be delicious as well.  They are simple to put together.  Start with a homemade or purchased hamburger bun, butter it, and lightly toast it under the broiler. Pile on hot beans, several slices of cooked bacon, a big slice of tomato, and top it all with a generous slice of cheese, Tillamook sharp cheddar is my favorite.  Put the sandwich back under the broiler until the cheese has melted and the bacon is bubbly.

Tell me the truth...what could be more delicious than this?

  2. This is how my Mom and Grandmother cooked as well. great Souther cooking. Wonderful food, but not fancy. Over the years however, my Moms style of cooking grew more and more creative but there is nothing like those comfort foods we grew up on!

  18. I have never had a baked bean sandwich! That is one fabulous pic. Makes you want to take a big bite.
I remember my mom soaking the beans to make baked beans, I just buy them and doctor them up, and cook them low and slow overnight.
