Corned Beef Hash


When corned beef was on sale before St. Patrick's Day I bought an extra one to stick in the freezer because I knew I would be hungry for another corned beef dinner
 and I like leftovers for sandwiches and hash. 
 I'm on a mission to use up what's in the freezer before local vegetables and fruits
 appear at the farmers market so I made the traditional corned beef and cabbage earlier in the week.  Reuben sandwiches are so good when home cooked corned beef is used
 and corned beef hash is one of my favorite weekend treats.


I like a simple hash prepared with chunks of potatoes, onions, green peppers and corned beef.
No gravy thank you.
The poached egg topper makes a lovely sauce.
Sprinkle the egg with a tablespoon or two of grated cheddar cheese
and a few grinds of sea salt and pepper.
Whole wheat toast, a plate of fresh pineapple and a mug of hot coffee round out the menu.

Thick slices of deli corned beef work well if you don't have any homecooked.

  8. I do like hash whether it's corned beef, leftover pork chop, or, sans meat. In fact, I recently did one with potatoes, beets and onions. Of course, my very favorite is corned beef and now I wish I had stocked up in March!!
    You said "no thanks" to gravy. I don't ever remember having any kind of hash with gravy. Is that, perhaps, a regional addition?

  11. Cathy, this looks nothing like what comes from the corn beef hash can I frequently see while grocery shopping. I'm going to have to try this recipe, my mouth is watering!

  12. This is the best looking corned beef hash ever! Have you eaten at Hash over in Sellwood? You should try it. They have homemade hash too. We went there for my bday last year. :)

  15. I grew up on corned beef hash. It has been some some since I had it. Having New York pastrami at the deli at Pike Place Market this past weekend I have a renewed appreciation for pastrami, Montreal Smoked Meat and corned beef. If ever I am in Portland I am going to hold you to your offer:D

    I like your cute little individual serving pans, too.

    I finally got my freezer pretty much emptied & then just last week filled it with shrimp, in anticipation of sky high prices on that due to the mess in the gulf. *sigh*

  25. This looks fabulous! Love that pretty little egg on top. I ran out of corned beef before I could make hash, then didn't get to the store for the sales. I'm just going to have to go buy some and stop feeling sorry for myself. :-)

  26. The Great Dane and I love hash, but especially Corned Beef Hash. He likes his with HP Sauce and I like mine with ketchup. A bit of runny egg on top is perfection!
