One of the pleasures of the holiday season (one of many, many) is french toast for Sunday breakfast made with panettone, the wonderful, light, fruit studded bread from Italy. And what's even better is that right after Christmas I always find it on sale for 50% off. I scored last week and bought two large ones, enough for Sunday breakfast and a fantastic recipe of panettone bread pudding. Its perfect for bread pudding because the light bread soaks up the eggy custard mix like a sponge. I posted the recipe last year and you can find it here. I guarantee it's the best bread pudding you've ever had. This french toast is pretty darn good also. I just dipped the bread slices in lightly beaten egg to which I added a little milk, a bit of vanilla and a dash of cinnamon. Fry in butter until the slices are golden brown and serve with warm maple syrup.
Panettone freezes well so if you happen to run across a super sale buy extra so you can enjoy a delicious bread pudding or french toast any time of year.

ReplyDeleteYes, it is great to get such a bargain on panetonne! I agree it makes great French toast but I've yet to make bread pudding with it! That will be on my "to do" list!

Last year I was in Williams Sonoma when they were making a French toast with the panettone they sell there that has chestnuts. It was the best French toast ever. I've got a few slices left from the holidays but my waistband is screaming No.

I made this the day after Christmas for my children and grands. It is a tradition for us to have this over the holidays in the form of French toast. My daughter actually purchased one for me at Traders Joes and it was the best one I had in years. Believe me I am a total nut about buying one every year and go nuts if it is not fresh. If it wasn't so cold here I would have gone over to Trader Joes to stock up on some on sale yesterday. It is freezing here in Atlanta and I don't want to go any further then the pot of chicken soup I made today:)

ReplyDeleteBrilliant! We buy a pannetone every year and there is always too much and it ends up stale. This is such a great idea to use it up - and so luscious! Love French toast (boy, who doesn't?) and made with pannetone must be so fabulous and special!
