What I love about quiche, in addition to it being an easy and very delicious dish, is that the pie can be made from what's in the fridge and in my house may never turn out the same way twice, and that's the fun of it! I use whatever bits of cheese I have, a mixture is best, and a few veggies and the result is always delicious. I like to make the filling mixture ahead of time and pour it into a chilled pie shell and bake it about an hour before dinner. How easy is that!
Canadian Bacon and Green Chile Quiche...this week's version
1 tablespoon olive oil
1/2 small onion, diced
1 cup diced Canadian bacon
1 small can diced green chiles
1 small tomato, seeded and chopped
1 green onion, thinly sliced
3/4 cup grated cheese (I used Monterey Jack and cheddar)
5 eggs, lightly beaten
3/4 cup half and half
1/4 cup fresh parsley, chopped
Sea salt and freshly ground black pepper
1 9-inch pie shell, either homemade or purchased
Preheat oven to 375 degrees. Heat olive oil in a medium skillet and saute the onion until tender. Combine the Canadian bacon, green chiles, tomato, green onion and grated cheese. Add sauted onion.
Mix the beaten eggs and half and half. Add chopped parsley, salt and pepper and the bacon mixture. Combine well and pour into the pie shell. Bake 30-40 minutes or until a tester inserted in the center of the quiche comes out clean. Let cool for about 10 minutes before slicing.
Be adventuresome and vary the ingredients depending on what's in your fridge. As long as you keep the ratio of liquid to meats and veggies the same, your quiche will be perfect every time.

ReplyDeleteI need to bake ahead for the amount of holiday guests so I am going to make two of these tomorrow and freeze them. I hate to fuss for long hours in the kitchen when all the kids and babies are here and totally forgot how a delicious quiche and a bowl of soup is satisfying and easy. Cathy...we are huge quiche lovers here. Comes from the glut of eggs our hens provide us with (sadly, not this time of year, lol). We love green chilies and candian bacon sounds like a great combo with the chilies. Thanks for sharing!

Hi Cathy, I too am a quiche girl! Love it. Such a quick and easy meal to prepare with whatever is on hand. I made Pam's potato crust quiche the other night, and since I am trying to shed a few pounds, I loved the potato crust instead of the pastry. As in saving calories...Love the pastry too! Love the ease in preparation of this. Quiches are one of my favorite things to cook, paired with a salad its a perfect meal.
ReplyDeleteQuicke is one of my favorite breakfast foods and a requirement for our Christmas morning breakfast. It is a wonderfully flexible dish. I put mine together the night before, stirring the liquid ingredients and pouring them over the filling in the pie crust just before baking.
