Available produce changes weekly at the farmers market and each week I check out what's new, hoping to find something I haven't tried before. I like tomatillos and have had them prepared many different ways in my favorite Mexican dishes, but I'm never cooked them myself because I wasn't sure what to do with them. My market neighbor has a wonderful produce stand and has brought in boxes of these little green lanterns shaped tomatillos the past several weeks. She suggested I roast them with jalapeno peppers (one jalapeno in my case) and then whiz them up in my food processor along with several cloves of garlic and the juice of a lime to make a delicious and versatile sauce.
I found this recipe for tomatillo chicken stew at Simply Recipes. Their method of roasting the tomatillos is excellent and the resulting stew is so, so good. I served it just as suggested, with rice, sour cream and a cilantro garnish. One jalapeno was plenty to give the stew a good hit of spice for my taste. This is a keeper and I know I will make it often. Tomatillos are in season now and I've already roasted several batches to stash in the freezer.
Go to Simply Recipes for this recipe and a first rate tutorial on roasting tomatillos and assembling the stew. September is tomatillo season so be sure to buy some if you see them in your local market. This is one of the tastiest recipes I've found in a long time. I hope you will try it.
